Maple Glazed St. Louis Ribs
Ingredients:
- 2 racks Smithfield All Natural St. Louis Style Spareribs
- 2 tablespoon sherry vinegar
- 1/4 onion, diced
- 3 cloves garlic
- 1/2 cup olive oil
- salt and pepper to taste
- 1/4 cup maple syrup
Directions:
1. Combine vinegar, onion, garlic and olive oil in blender; pulse until smooth. Season with salt and pepper. Brush onto ribs; cover and refrigerate for 1 to 2 days.
2. Heat charcoal or gas grill for 2-zone cooking; direct heat zone about 400oF. and indirect heat zone about 275oF.
3. Place ribs, meaty side up over indirect heat zone for 2 1/2 to 3 hours until tender. Move to direct heat zone and brush each rack with 2 tablespoons maple syrup. Grill 5 minutes to set.
4. Cut each slab in half and serve with giardiniera (Italian pickled vegetables).
