Hand-salted and dry cured from a centuries old recipe. Seasoned with black pepper and smoked over fires built from aged hardwoods, permeating the ham for up to12 months resulting in its distinctive, succulent flavor. Surface mold may appear but is in no way injurious (like the mold on fine cheeses). Preparation instructions for soaking and cooking methods included. Comes in a traditional cloth bag.
Uncooked, 16-19 lbs. Serves about 36.

UPON RECEIPT:
Hang your ham in a cool dry area so air may circulate around it, or refrigerate upon receipt. Surface mold is common on uncooked salt cured hams and can be scrubbed off prior to the cooking process. COOKING:
Preparation prior to cooking - Uncooked Genuine Smithfield Hams require soaking before cooking since these hams are salt cured. The length of soaking time should be influenced by your taste for salt (longer soaking results in a milder ham). Genuine Smithfield Hams have the longest curing period and will be salty and dry by nature. Soak Genuine Smithfield Hams 36 hours or longer. Changing the water every several hours during soaking will aid in drawing salt from the ham. After soaking, wash ham thoroughly in warm water. Use a stiff brush to scrub ham thoroughly and remove all pepper and surface mold, if present. Mold is a common and natural occurrence on aged hams (just like fine aged cheeses), denotes proper curing, and does not affect the taste or quality.

Oven Cooking - Wrap in heavy duty aluminum foil, forming a vessel with the bottom layer. Place in a large roasting pan for support. Add 4 to 5 cups of water within the foil and carefully join the edges of the aluminum foil making sure the edges are closed. Preheat oven to 300°F and bake approximately 3 hours or 20 minutes per pound. Using a meat thermometer, check for a 163°F internal temperature in the thickest part of the ham. Remove ham from oven when correct internal temperature is reached and let cool to room temperature for one hour. Remove skin and fat as desired.

Water Cooking – Place ham skin-side down in a roasting pan large enough to cover ham and fill with cool water. Bring water to 190°F (not quite simmering). Cook to 163°F degrees internal temperature (or about 25 minutes per pound), adding water to keep ham covered. Remove ham from water when correct internal temperature is reached and let cool to room temperature for one hour. Remove skin and fat as desired.

GLAZING & SEASONING:
If a sweet coating is desired, sprinkle the fat side with brown sugar and bread crumbs and bake in a 400°F oven until brown (approximately 15 minutes). Or to add your personal glaze choice, please follow the recipe or manufacturer's instructions for glaze preparation. No further seasoning is recommended. CARVING:
With ham on a flat surface, dressed side up, begin about two inches from the hock (or small end) and make the first cut straight down through to the bone. For each succeeding cut, slant the knife slightly and cut thinly towards the first straight cut (in the direction of the hock). Continue slicing thinly down to and partially around the bone. Decrease slant as the slices become larger, while keeping the slices thin. Eventually the bone formation will cause you to cut smaller slices at different angles. The key is to keep the slices thin! Be sure to keep the bone and remaining meat for seasoning. SERVING SUGGESTIONS:
Best served as the focus of a buffet, carving station, or pre-sliced for ease of serving. A savory complement to a poultry or seafood entrée. Perfect for biscuits, or chopped for salads and omelets. Use the bone and leftovers to season soups, beans, or vegetables. Delicious for breakfast, lunch, or dinner.

Highly Recommended!
The Best one can find in the western hemisphere to be used in Chinese cooking, especially for the Shanghaies cuisine... When I purchase it next time, I hope they could saw it into 1-2 inch pieces with the bone intact... Thank you, Smithfield!!

We just got our ham for this Christmas and decided to order a second one. Imagine my horror at seeing the words, "Out of Stock". I've eaten at least one of these hams every year of my life. We have a custom-made pan my sister gave me as a gift 51 years ago. We've given our children ham pans. It can never be Christmas without a Smithfield ham. We have ordered these hams at various times of the year, and never considered them to be seasonal items, altho of course they are part of Christmas. Now I'm worried that I'm about to eat my last (and maybe THE last) Smithfield ham. I sincerely hope that is not true, and I will be watching the website to see if they become available again. I may stockpile a few.

Deviled Ham
Don't forget to save every little speck that falls off into the platter including the fat. There is no waste. I save these scraps in a sealed bowl until the end. Then I grind or mince them with mustard, mayonnaise and freshly ground pepper. Stack it high on homemade biscuits. It's actually the best part.

Exceptional!
Our family has this ham for Easter and Christmas. Without its unique, exceptional taste, those feasts will not be complete. The family looks forward to it more than any of the other dishes on the table. Everyone never gets enough of its taste even after he holidays, for breakfast, snack and dinner. Very pleased and satisfied with it.

Childhood memories!
I grew up on this ham. My dad was a Virginian and this was a Christmas staple. Every year we looked forward to it. The process of watching him cut open the bag, fill his ham-soaking bucket halfway, and lower the ham into the bucket was, as boring as it sounds, fascinating to us as children. We would literally run home from the bus stop after-school because we knew he was about to change the water. Dad passed a while back, when I was ten. I'm 35 now and I don't have kids but I follow the same process when I cook for friends and family for the holidays. It's my way of including dad at the table too.

My Ham Of Choice For Special Occassions
Raised up on this hams; it's a family tradition!!! I've been cooking these hams since I was in my teens. They are the best money can buy and the quality is superb. You and your family and/or guest won't be disappointed. NOTE: Make sure you follow the instructions to the letter!!!!!

Salt cured pepper coated hams
I grew up in Virginia Beach, VA and at least 2 times a year my mom would prepare these hams. I've been in Oklahoma for the past 25 years and nothing out here compares to Smithfield's ham. So glad I found I can order online anytime ! They are the best !

Best ham ever
I grew up in the DC metro area. Spent a lot of time in Va. We always had a country ham. Smithfield Hams are the very closest you can get to those good home cured country hams. I love them. Order as often as I can. You can't find anything like them here in Az.

True down home flavor
My ham weighed 24lbs. (not complaining). Had to cut the shank off to fit it into the largest roaster pan I could find. took 10 hrs. to cook. Delicious!

Great Experience
This is our second year in a row buying THIS product. Being a native Richmonder (VA), we grew up on these wonderful hams. Country hams in general and Smithfield hams in particular are not available in this neck of the woods. These have the original rich flavor I know so well.

Measurement - will it fit?
This is a great ham BUT can someone figure out the length of this ham - you know this is UNCOOKED, so buyers are aware if it will fit in their cooking equipment. It will be helpful if you post the length of this ham for buyers like me.
