Upon Receipt: Pork chops are shipped frozen, in a cooler with dry ice. If not for immediate use, place chops in the freezer. Take out as needed.
Skillet: Thaw and season pork chops as desired. Heat oil in large skillet over medium-high heat. Add chops to skillet. Cook 3 minutes, turn and cook additional 3 minutes to sear surface. Continue cooking until internal temperature reaches 145°F., carefully turning chops occasionally
Grill: Thaw and season pork chops as desired. Heat charcoal or gas grill for two zone cooking - direct heat zone about 400 degrees and indirect heat zone about 275 degrees. Grill on indirect heat for approximately 17 minutes per side, until internal temperature reaches 135 degrees. Move to direct heat zone and grill until internal temperature reaches 145 to 160 degrees, turning occasionally. Let stand 5 minutes.
